Iberian Pork, a type of breed which can be cooked medium rare, like steak. This keeps the meat tender while also allowing the fat to melt. Iberian meat is tender and flavorful like a steak because the meat is heavily marbled. It is fattier than regular pork and more of a red color instead of the traditional pinkish color.
